Beef Tenderloin & Greens Dijon

Beef Tenderloin & Greens Dijon
Ingredients:
1pound beef tenderloin tips
1tablespoon olive oil
1/2teaspoon salt
1/4teaspoon pepper
1package (8 to 10 ounces) European salad greens
Croutons

Dijon Dressing:
1/2cup olive oil
1/4cup Dijon-style mustard
1/4cup balsamic vinegar
1clove garlic, minced
1teaspoon sugar
1/4teaspoon pepper

Instructions:
1.Whisk dressing ingredients in medium bowl until creamy. Cut beef tenderloin tips into 1 x 1/2-inch pieces.
2.Heat oil in large nonstick skillet over medium-high heat until hot. Add 1/2 of beef; stir-fry 2 to 3 minutes or until outside surface of beef is no longer pink. Remove. Repeat with remaining beef. Season with salt and pepper.
3.Toss greens with 1/2 cup dressing in large bowl; place on platter. Top with beef and croutons. Serve with remaining dressing.

Makes 4 servings.

Nutrition information per serving: 492 calories; 26 g protein; 7 g carbohydrate; 40 g fat; 746 mg sodium; 71 mg cholesterol; 3.9 mg niacin; 0.4 mg vitamin B6; 2.2 mcg vitamin B12; 4.5 mg iron; 5.2 mg zinc.

This recipe is an excellent source of protein, vitamin B6, vitamin B12, iron and zinc, and a good source of niacin.
